One of the standout moments from the Live Culinary Experience at the Home Show was a decadent and unexpected flavor pairing: Pear Pasta with Asiago Fondue, crafted by Chef Bryan, Executive Chef at Prezzo Italian Restaurant & Bar.
Creamy, cheesy, and delicately sweet, this recipe is a perfect example of fine Italian dining with a modern South Florida twist.
Ingredients
For the Asiago Fondue:
- Shaved asiago
- Crumbled gorgonzola
- Grated parmesan
- Grated pecorino
- Heavy cream
- Garlic powder
- Salt & pepper (to taste)
- Cornstarch + water (to make a slurry for thickening)
For Plating:
- Pear pasta fiocchi
- Asiago fondue
- Pinch of chopped parsley
- Dash of candied walnut dust
Instructions
- Prepare the Fondue:
- In a large pot, bring the heavy cream to a boil (180°F).
- Reduce to medium heat and mix in garlic powder.
- Gradually add all cheeses while stirring.
- Use a large hand blender to emulsify until smooth and creamy.
- Add salt and pepper to taste.
- If needed, stir in your cornstarch slurry to achieve desired thickness. Keep a close eye on the heat to prevent burning.
- In a large pot, bring the heavy cream to a boil (180°F).
- Plate the Dish:
- Spoon asiago fondue onto a dish.
- Top with cooked pear pasta fiocchi.
- Garnish with a sprinkle of chopped parsley and a dash of candied walnut dust.
- Spoon asiago fondue onto a dish.
