One of the standout moments from our Live Culinary Experience at the Fort Lauderdale Home Design and Remodeling Show was watching Chef Bhavesh Patel, Executive Chef of the Broward County Convention Center, bring bold flavor and technique to the live cooking demo.
In front of a packed audience, Chef Bhavesh prepared spiced chicken samosas with a refreshing cilantro yogurt dipping sauce, making for the perfect balance of warm, aromatic spices and cool, creamy contrast. The live demo blended culinary artistry with interactive energy, giving guests a delicious activation while exploring the show floor.

Spiced Chicken Samosas
Makes 20 samosas
Ingredients
- 1 tbsp oil
- 1.5 small onions, diced
- 3 tbsp grated ginger
- 3 tbsp grated garlic
- 6 tbsp canned crushed tomato
- 2 tsp coriander powder
- 2 tsp cumin powder
- ½ tbsp turmeric powder
- ½ tsp cayenne powder
- 2 tbsp tamarind paste
- 2 lb ground chicken breast
- 1 tbsp salt
- ½ tsp black pepper
- 2 tbsp chopped cilantro leaves
- 1 pack small empanada wrappers
Directions
Sweat onions in a large pot until translucent. Add ginger and garlic and cook for 2–3 minutes. Stir in the ground spices and cook for at least 2 more minutes to toast and develop flavor. Add crushed tomatoes and cook for another 2 minutes, then mix in tamarind paste.
Add the ground chicken and cook with the spiced mixture, stirring constantly, until the filling is fully cooked and dry but still formable. Let cool, then mix in chopped cilantro.
Divide the filling into 20 portions. Cut empanada wrappers in half, form each into a cone, and fill with one portion of chicken. Lightly wet the inside edge, seal, and crimp with a fork. Fry in hot oil at 350°F until golden brown.
Cilantro Yogurt Dipping Sauce
Ingredients
- 1 cup plain Greek yogurt
- ¼ cup fresh cilantro, finely chopped
- 1 tbsp fresh lime juice
- 1 small garlic clove, grated
- ¼ tsp salt
- Optional: pinch of cumin or cayenne for extra flavor
Directions
In a bowl, combine yogurt, chopped cilantro, lime juice, grated garlic, and salt. Stir until smooth and fully incorporated. Adjust seasoning to taste. Chill for at least 20 minutes before serving to allow flavors to blend.
