Chef Patel of NiMo in Tequesta, FL, showed off his culinary magic and wowed us with a dish that perfectly encapsulates the flavors of the Summer season!
This Summer Corn Salad is not only mouthwateringly delicious but also incredibly simple to prepare… not to mention it is super healthy too! Whether you’re hosting a barbecue or looking for a refreshing dish to enjoy on a warm day, this recipe is sure to become a favorite.
Ingredients:
- 1 head of romaine hearts
- 1 ear of grilled corn
- 1 zucchini cut in half and grilled
- 1 heirloom tomato large diced
- 4 sprigs of basil chopped
- Dressing – whisk all ingredients below together:
- ¼ cup tahini
- 2 lemons juiced
- 1/8 cup water
- Pinch of salt, pepper, and sugar
- 1 teaspoon ground coriander
- 4 cloves of garlic confit
- ¼ cup olive oil
- Toss all together and enjoy!
