The 2024 Fall edition of the Fort Lauderdale Home Design and Remodeling Show was nothing short of delicious! We were delighted to learn how to make authentic Mexican tacos from the taco maestro himself, Chef Tulio! To recreate his delicious Birria Tacos, read the recipe below:
Serving Size:
- Makes 90 tacos
Ingredients:
- 15lbs of Short Rib
- 1 cup of Salt
- Water as needed
- Dry Chile guajillo – 15 each
- Chile Ancho – 8 each
- Whole Garlic – 10 each
- Yellow Onions – 2 each
- Roma Tomatoes – 20 each
- 1 tablespoon of Oregano
- 2 tablespoons of Paprika
- 1 tablespoon of Cumin
- 1 tablespoon of Dried Thyme
- 1 tablespoon of Whole Black Pepper
- Ā½ of a Cinnamon StickĀ
Directions:
In a large pot, add 4 gallons of water and bring to a boil. Add the short rib and cut into large chunks. Then in a smaller pot, sautƩ 15 guajillo chiles, 8 seedless ancho chiles, and 10 garlic cloves. Add 1/4 cup of canola oil and cook for 5 minutes.
Add 20 tomatoes, halved, and 2 yellow onions, quartered, and sautƩ for another 5 minutes. Then add 1 tablespoon each of cumin, oregano, whole black pepper, and dried thyme. Add 1/2 stick of cinnamon, 2 tablespoons of paprika, and 3 cups of water. Cook together for an additional 5 minutes.
Remove the sauce from the stove and blend the ingredients together using a blender.
Then, add the blended sauce to the short ribs and water, then add 1/2 cup of salt. Cook for about 4 hours, or until the meat is tender.
When done, separate the meat from the sauce and let it cool. Skim off the greasy layer from the top of the sauceāthis oil will be used to pan-fry the tortillas when making the tacos.
When all ingredients are cooked:
1. Dip the tortillas in the reserved oil and pan-fry.
2. Add short rib, cheese, and onions to the tortilla on the flattop.
3. Fry on both sides until crispy.
