Spice Up Your Kitchen: Chef Bhavesh’s Kadahi Chicken Recipe

We were thrilled to have Chef Bhavesh at the 2025 Fort Lauderdale Home Design and Remodeling Show over Labor Day Weekend as a featured chef at our Live Culinary Experience. One of the standout dishes he prepared was his Kadahi Chicken — a fragrant, flavorful Indian classic cooked in a traditional kadahi (wok). Here’s how you can bring this restaurant-quality dish into your own kitchen.

Kadahi Chicken Marinade

Servings: 4 | Prep Time: 1 hour

Ingredients:

  • 600 grams chicken breast, cut into ½” cubes
  • 2 teaspoons lemon juice
  • ½ tablespoon garlic paste
  • ½ tablespoon ginger paste
  • ½ teaspoon turmeric
  • 2 teaspoons coriander seeds, roasted and ground
  • 1 teaspoon dried pomegranate powder
  • 4 tablespoons Greek yogurt
  • 2 tablespoons clarified butter
  • Salt to taste

Directions:

  1. Combine all ingredients in a bowl.
  2. Allow chicken to marinate for 1 hour.

Kadahi Chicken Spice Blend

Servings: 4 | Cook Time: 5 minutes

Ingredients:

  • 2 pieces black cardamom
  • 2 teaspoons black peppercorns
  • 6 pieces green cardamom
  • 4 pieces dried red chili
  • 2 tablespoons coriander seeds
  • 1 teaspoon black mustard seeds
  • 2 teaspoons turmeric
  • 2 teaspoons mild chili powder

Directions:

  1. Place all whole spices in a sauté pan and roast until fragrant.
  2. Transfer to a plate and allow to cool.
  3. Grind the cooled spices into a fine powder using a spice mill.
  4. Add turmeric and chili powders to the mixture and set aside.

Kadahi Chicken (Cooked in an Indian Wok)

Servings: 4 | Cook Time: 40 minutes

Ingredients:

  • 6 tablespoons oil
  • 2 tablespoons butter
  • 2 teaspoons cumin seeds
  • 2 bay leaves
  • 3 medium onions, chopped
  • 10 cloves garlic, minced
  • 2-inch piece ginger, minced
  • 2 cups water
  • 2 medium tomatoes, finely chopped
  • 2 tablespoons Greek yogurt
  • Salt to taste
  • 2 teaspoons fenugreek powder
  • 2 teaspoons garam masala
  • Chopped cilantro, for garnish

Directions:

  1. Heat oil and butter in a kadahi (Indian wok). Add cumin seeds and bay leaves; cook until cumin seeds sputter.
  2. Add chopped onions and cook until caramelized to a chestnut color.
  3. Stir in ginger and garlic, cooking an additional 5 minutes.
  4. Add the prepared spice blend and water; cook for another 5 minutes.
  5. Add tomatoes, yogurt, and marinated chicken. Season with salt.
  6. Cook on medium-low heat until the chicken is fully cooked and oil rises to the surface.
  7. Mix in fenugreek powder and garam masala.
  8. Serve over warm basmati rice and garnish with chopped cilantro.
